BOBOTIE RECIPE

There are as many variations for Bobotie as there are cooks. The only secret is to find you own favourite amount and mix of spices

INGREDIENTS
1 kg lean beef mince
1 large onion, chopped
2 Tbsp. oil
250ml (1 cup water)
250ml milk
2 slices thick bread
2 Tbsp. Chutney
4 Tbsp. lemon juice, fresh
3 cloves garlic, crushed
1 heaped Tbsp. Medium curry powder
1 tsp all spice
1 tsp. garam masala
Salt and freshly ground black pepper
2 eggs, beaten
1 tsp. turmeric
6 bay leaves
METHOD
- Soak bread in water
- Sauté the onions and garlic in the oil until translucent
- In a large bowl add masala, turmeric, mince, all spice and chutney and mix together
- Squeeze water from bread and add bread to mixture, followed by the garlic and onion mixture
- Spread mixture into small ovenproof dishes or ramekins (for individual portions) or casserole dish and place the leaves on the top
- Whisk together the 1 cup of milk with the eggs and pour on top of mixture
- Bake in oven at 180˚C for 40 – 50 minutes until set.
Serve with yellow rice
