Traditional oxtail stew

INGREDIENTS

2 T (30ml) olive oil/sunflower oil  

1kg oxtail

Steak and chops spice

Salt

Crushed peppercorns

1 large onion, chopped

2 tsp crushed garlic

1 large green pepper, chopped

½ each red and yellow pepper, chopped

1 sachet tomato paste

1 cup water mixed with 2T Worcestershire sauce

2 carrots peeled and sliced

½ tin red beans

½ tin butter beans

METHOD

  1. In a deep heavy pot, heat oil and add oxtail, brown on all sides
  2. Add steak spice and peppercorns
  3. Add onions, garlic, peppers and puree or paste, keep browning and avoid burning
  4. Add water and Worcestershire sauce mix to help lift bits off the bottom of pot, then add remainder of the water
  5. Cover pot and simmer for about 2 hours occasionally adding water mix to meat and turning it to help it cook
  6. Add carrots and cook until tender
  7. The meat should fall of the bone and the sauce thick, add beans and cook for 15mins
  8. Garnish with basil (fresh) and serve with dumplings
